Situated in one of Shakespeare's drinking haunts in the beautiful small village of Broom, lies this historical 16th Century public house. After discovering this lovely building lying empty, we were passionate to restore and bring the building back to life.
We have a traditional bar serving real ales and fine wines in front of roaring log fires by winter and a sunny, spacious beer garden during summer.
We are two well established chefs in the Midlands and our focus is on using good quality local ingredients from the abundance of great suppliers we have on our doorstep and bring them together to create some great menus for you to enjoy.
Fritz's passion for cooking started at a young age during a holiday in Germany where he got the chance to watch a celebrity chef at work, cultivating an interest in the trade. He got a job in a small Michelin starred fish restaurant in Copenhagen, accompanying the head chef daily to the harbour for the 1st catch, this inspired his interests in cooking and love of great produce.
Fritz gained his professional qualifications at the Hotel and Catering College in Copenhagen and Hand Picked Hotels - Ettington Park over three years. He stayed on at Ettington Park, working his way up to Junior Sous Chef under the guidance of the fantastic head chef Chris Hudson who was the Chairman of the Midland Association of Chefs.
Following Ettington Park he spent some time at Raymond Blanc's world famous Le Manoir aux Quat Saisons gaining an insight into the cooking style and methods. He worked in two 3 AA rosette restaurants - Wood Norton Hall and Mallory Court Hotel before finally taking on his first Head Chef's role at Charingworth Manor in 2004 achieving a second AA rosette during his time there. After this Fritz felt ready for a new challenge and had the opportunity to work as Executive Chef at the Four Alls and The Kings Head.
Fritz was then chosen to head up Hand Picked Hotels at the Priest House on the River and successfully took this on, again achieving the 2 AA rosettes in the fine dining restaurant for which Fritz had become famous for alongside a 50 cover Brasserie operation and a very large conference and banqueting facility.
After 2 years, Fritz decided to gain more experience in different areas, exploring the methods of the Hinds Head under Heston Blumenthal and taking on Cornwall's busiest operation, the Headland Hotel in Newquay. Fritz also went back to Denmark to open the new world famous Lubker resort, working there alongside Michelin starred chef Kenneth Hansen.
Missing his adopted home, he came back as Executive Chef for The Lords Group of hotels and based himself within the Midlands. During this time Fritz had the opportunity to work at 3 of the famous Jamie's Italian restaurants and gained amazing experience of some of the finest Italian products money can buy.
Fritz went on to become Executive Head Chef at Thoresby Hall overseeing the 2 AA rosette restaurant, an Italian restaurant and the main restaurant.
Over the years he has won numerous awards at Midland Ass. of Chefs, Hotelympia, NEC Heart of England and Food and Drink Expo amongst which were Young Chef of the Year, 1st in Class for Duck and Fish dishes and Gold Awards for Team Challenges
Finally in 2012, Fritz teamed up with another chef colleague Richard Walton who was also well-known in the Midlands for his cooking and they found the perfect place - The Broom Tavern and have embarked on an exciting journey to re-open and bring the Tavern back to life, enabling them to offer some fantastic food of their own in a wonderful village setting.
